The Hard Times Cafe was not the creation of a corporate think tank. It was conceived as a continuation of a family tradition, a desire to maintain an important part of America's culinary history and the founders desire to create a place that reflected his love of American western art and culture. Fred and Jim Parker pooled their resources, mortgaged their homes and opened the first Hard Times Cafe in 1980. Since then, this revival of a unique institution has become a major presence in American chili culture.
